MUSHROOM AND LAMB STEW

Serves 4 to 5

Ingredients:

Stew

  • Olive Oil, 2 tablespoons
  • Lamb Meat, 500 grams (cut into cubes, towel dry and sprinkle with black pepper)
  • White Button Mushrooms, 18 (250 grams, quartered)
  • Onion, 1 (around 125 grams, roughly chopped)
  • Carrots, 3, (200 grams, peeled and sliced)
  • Celery, 2 stalks (150 grams, cut into chunks)
  • Italian Herbs, 1 tablespoon
  • Minced Garlic, 3 teaspoons
  • Tomato, 3 (around 250 grams, chopped)
  • Clear Chicken Broth, 800ml
  • Sweet Potato, 2 (about 150 grams, cut into cubes)
  • Frozen Peas, 70 grams (thawed)
  • Fresh Parsley, to garnish (finely chopped)

Flour Mixture

  • Clear Chicken Broth, 120ml
  • Flour, 30 grams

 

Instructions:

  1. In a non-stick frying pan, heat 1 tablespoon of olive oil. When heated, sear black peppered lamb cubes on all sides till brown and set aside.
  2. In the same non-stick frying pan, stir fry mushrooms till brown and set aside. 
  3. In a 3.0L Thermos® Shuttle Chef® inner pot, heat 1 tablespoon of olive oil and stir fry chopped onions, carrots slices, celery chunks and Italian herbs under low-medium heat for 5 minutes.
  4. After 5 minutes, add minced garlic and stir fry for about 30 seconds. Add chopped tomatoes, clear chicken broth, seared lamb cubes and stir-fried mushrooms. Bring the contents to a boil and simmer for 10 minutes.
  5. After 10 minutes and when boiling, close the inner pot with lid and transfer it into the Shuttle Chef® outer pot. Let it sit aside to continue cooking for at least 3 hours.
  6. After 3 hours, remove the inner pot and place it on the stove. Bring contents to a boil and add sweet potato cubes.
  7. When boiling, close the inner pot with lid and transfer it into the Shuttle Chef® outer pot. Let it sit aside for 1 hour.
  8. Meanwhile, prepare the flour mixture by whisking the clear chicken broth and flour until smooth, and set aside.
  9. After 1 hour, remove the inner pot and place it on the stove. Add the flour mixture and thawed peas, and stir until desired consistency.
  10. Before serving, garnish with chopped parsley. Enjoy the stew with white rice!

 

Notes:

  • This recipe is based on using the Thermos® Shuttle Chef® TCRA-3000. You may adjust the ingredient quantities based on the capacity of the Shuttle Chef®.
