BLACK FUNGUS WITH APPLE SOUP

Serves 3

Ingredients:

  • Cloud Ear Fungus, 2 pieces
  • Pork muscle meat, 3 pieces
  • Apple, 2 (rinsed and quartered)
  • Pitiless red dates, 10
  • Meat broth, 250ml or Pork ribs, 300g, chopped into small pieces.
  • Water
  • Salt, to taste

Instructions:

  1. Soak cloud ear fungus in water until soft. When soft, rinse fungus until water is clear and without odour. Set aside for later use.  
  2. Blanch pork muscle meat with hot boiling water for 5 minutes to remove any scum. Rinse and set aside for later use.
  3. In a 3L Thermos® Shuttle Chef® inner pot with 1.5L water, place all ingredients into the pot and fill inner pot will more water till inner rim.
  4. Bring contents to a rapid boil, close the inner pot with lid and simmer for 30 minutes.
  5. After 30 minutes, transfer inner pot to the Shuttle Chef® outer pot. Let it sit aside to continue cooking for at least 2 hours.
  6. Before serving, season with salt to taste.

Notes:

  • This recipe is based on using a 3.0L Thermos® Shuttle Chef® TCRA-3000. You may adjust the ingredients quantity based on the capacity of the Shuttle Chef®.
