LOTUS ROOTS, BAMBOO SHOOTS AND MUSHROOMS SOUP

Ingredients:

  • Lotus Roots, 500 grams (peeled and cut into slices)
  • Bamboo Shoots, 100 grams (soaked in water and rinsed)
  • Chinese Mushrooms, 50 grams (soaked in water, rinsed and stems removed)
  • Ginger, 2 slices
  • Salt, 1 teaspoon (or to preference)
  • Mint Leaves, for garnish


Instructions:

  1. In a Thermos® Shuttle Chef® inner pot, add appropriate amount of water and bring it to a boil.
  2. When boiling, add lotus roots slices, bamboo shoots, mushrooms and ginger slices, and bring it to another boil. Simmer for 5 minutes.
  3. After 5 minutes and when boiling, close inner pot with lid and transfer it into the Shuttle Chef® outer pot. Let it sit aside for 2 hours.
  4. Before serving, add salt to taste preference and garnish with mint leaves.
