TAIWANESE SESAME OIL CHICKEN SOUP

Serves 4 to 5

Ingredients:

  • Black Sesame Oil, 2 tablespoons
  • Ginger, 45 grams (sliced, with skin on)
  • Chicken Drumstick, 500 grams (washed)
  • Taiwanese Rice Wine (Michiu), 50ml
  • Sugar, 3 teaspoons
  • Chicken Broth, 1 litre
  • Salt, ½ teaspoon
  • Scallion, to garnish (chopped)

Instructions:

  1. In a 3.0L Thermos® Shuttle Chef® inner pot, add black sesame oil, sliced ginger, and stir fry over medium heat for 2 minutes.
  2. After 2 minutes, add in chicken drumsticks, and stir fry for 10 minutes, until browned on all sides.
  3. Add in Taiwanese rice wine, sugar, chicken broth, salt, and bring contents to a boil. Let it simmer for another 10 minutes.
  4. After 10 minutes, cover the inner pot with lid and transfer it into the Shuttle Chef® outer pot. Let it sit aside to continue cooking for at least 4 hours.
  5. Before serving, garnish with scallions.

 

Notes:

  • This recipe is based on using the Thermos® Shuttle Chef® TCRA-3000. You may adjust the ingredient quantities based on the capacity of the Shuttle Chef®.
