Serves 4
Ingredients:
- Water, 1.5 litres
- Chicken Thigh, 750 grams (3 pieces, bone-in)
- Carrot, 100 grams (cut into chunks)
- Daikon, 100 grams (cut into chunks)
- Luo Han Guo (Monk Fruit), ½ (washed)
- Sweet Southearn Almonds (Nan Xing Ren), 2 teaspoons (rinsed)
- Chicken Broth, 1 litre
Instructions:
- In a 3.0L Thermos® Shuttle Chef® inner pot, add in water and bring to a boil. Once boiling, add in the chicken thighs and blanch for 2 minutes.
- Remove the blanched chicken thigh and set aside for later use. Discard the water.
- In the same 3.0L Thermos® Shuttle Chef® inner pot, add in chicken thigh, carrot, daikon, luo han guo (monk fruit), sweet almonds, chicken broth, and bring contents to a boil.
- Once boiling, continue simmering for 5 minutes. Close the inner pot with lid and transfer into the Shuttle Chef® outer pot. Let it sit aside to continue cooking for at 4 hours.
Notes:
- This recipe is based on using the Thermos® Shuttle Chef® TCRA-3000. You may adjust the ingredient quantities based on the capacity of the Shuttle Chef®.
