COLLAGEN CHICKEN PORK BROTH

Ingredients:

  • Organic Soya Beans, 1 cup 
  • Pork Bones, 5
  • Chicken Bones, 6
  • Chicken Feet, 8
  • Ginger, 1.5 (about thumb-sized, smashed)
  • Water, 3.8 to 4 litres
  • Organic Apple Cider Vinegar, 1 tablespoon

 

Instructions:

  1. The night before, soak organic soy beans with hot boiling water in a 1.5L Thermos® Shuttle Chef® overnight and discard water the next morning.
  2. Blanch pork bones in a pot of boiling water twice, for about 30 minutes. Give pork bones a good scrub to remove all residues.
  3. Blanch chicken bones and chicken feets in a pot of boiling water. Rinse under running water thereafter. 
  4. In a 6.0L Thermos® Shuttle Chef® inner pot, add pork bones, chicken bones, chicken feet, ginger, organic soy beans and water.Bring it to a boil over medium high heat, and let it boil for 5 minutes.
  5. Simmer on medium low heat for another 20 minutes. Remove any foam or scums that may form on the top of broth. 
  6. Turn heat source up to medium high heat and bring contents to a a rapid boil for 5 minutes. 
  7. When boiling, cover the inner pot's lid and transfer to the Shuttle Chef® outer pot. Let it sit aside for 3 days.
  8. Over the period of 3 days, bring the inner pot out to boil over medium high heat for at least 10 minutes, after every 8 to 10 hours. Add organic apple cider vinegar during the 3rd re-boil. 
  9. After 3 days, cool the inner pot in a basin of iced water. 
  10. Strain the broth with mesh strainer and keep it into mason jars for storage.

Notes and tips

  • This recipe is based on using 1.5L Thermos® Shuttle Chef® RPF-20 and 6.0L Thermos® Shuttle Chef® TCRA-6000 with 6.0L Shuttle Chef® inner pot KOB-6000I
  • Should you wish to keep the broth halal, you may replace the pork bones with beef bones.
  • You may store the broth in small portions for future use.
  • The broth can be kept in the freezer for up to 3 months and in the fridge for 3 to 5 days. 
  • The broth is an excellent soup base for beauty pot, porridge, noodles, soup, steaming, one pot meals and flavoured rice.
