Start your day with these delicious and fluffy appams that are soft and thick in the middle, and thin and crispy at the side. Preparation starts the day before as you will need to soak the rice and coconut in water for at least six hours, and leave the batter to rise overnight. However, it is all worth it once you sink your teeth into these tasty pancakes, served with vegetable stew or chickpea curry.

We’ve heard of mint tea, but what about mint rice? This south Indian recipe is a refreshing twist to your plain rice. With a mix of more than a dozen spices, this aromatic dish is good enough to eat on its own.
